Danielle’s Strawberry and Cream Cake
A simple, light and luxurious sponge cake for any occasion!
This recipe is for 2 x small sandwich cake tins (if you have big tins or would like to make a big version you can increase the mixture to 6 0z sugar/butter/flour and 3 eggs)
For the sponge cake
40z Caster Sugar
2 eggs (gently beaten together)
40z Softened Margarine or Butter
40z Self Raising Flour
For the middle
1 punnet of strawberries
1 medium tub of double cream
Icing Sugar for dusting
The trick to getting a light and airy sponge cake is to get lots of air into the mixture, for this reason it is best to use an electric hand whisk and be very careful when hand folding the flour in.
Prepare two sandwich tins by greasing and lining with greaseproof paper. Preheat the oven to 180 degrees.
Using an electric hand whisk, beat together the sugar and softened margarine or butter until the mixture goes pale in colour and fluffy. Add the eggs a little at a time making sure you beat well between additions.
Sieve the flour into the mixture in 2 or 3 lots. Fold in by hand using a spoon or spatula. Be very careful not to knock all that lovely air out of the mixture.
Divide the mixture between the two sandwich tins, level out and place carefully into the middle of the oven for 25-35 minutes or until golden in colour and cooked through (when you put a skewer into the centre of cake and pull it out, the skewer will be clean when the cake is cooked)
Try not to open the oven whilst cooking as this may make the cakes sink in the middle!
When the cakes are cooked, leave to cool for 5-10mins, then carefully remove them from the tins and place on a wire cooling rack.
Whip up a medium tub of double cream.
Wash and thinly slice the strawberries length ways
When the cakes are completely cool, place a layer of the sliced strawberries on one of them (save a few for decorating the top if you wish).
On the other cake spread the cream evenly.
Sandwich the two together, sprinkle the top with icing sugar and decorate as you wish with a few of the strawberry slices.
